When will be possible change server with the own character? I started the game in a server full of japanese and I am italian but I didn't know the server was wrong for me...so, when I'll can join to italians??

Unfortunately, there is currently no way to change server. It also looks like it may be a long time coming.
Although it is not ideal, my advice to you (considering you haven't invested all that much time into the game) is to start a new character in a server that has a higher population of Italian speakers. You don't have to delete your current character if you are that attached to it if you find that option unacceptable.
I know of a LS on Bodhum server at least, that has a LS consisting of pretty much nothing but Italian players (The Italian Job)
