I did a bit of searching yesterday and wasn't able to find any comprehensive info on this question. I'm wondering what new fish you can catch with the folklore tomes, and what they can be used for. Has anyone tried it, or are have you seen the information elsewhere?

they have zero use except red scrip exchange
there might be new recipies in future which might require them, actually they are completely worthless -

Each folklore book in my experience (I personally have obtained two of the three) allows you to catch the red scrip fish for specific regions such as loosetongues requires Drav tome, stupendemys requires Azy tome and I think Capelin requires the Coer folklore tome. There may be more fish limited to the tomes and it could be many 1* level 60 fish require them but I'm not sure since when use the tome/books it doesn't show anything in your fishing log/guide as newly opened up, it merely unlocks your ability to catch some that already take up a slot in the fishing guide.
