A bit new to PLD tanking
Hey everyone. I'm a bit new to playing PLD, only really started playing one towards the end of ARR. I just recently hit 60, and I'm torn on whether or not I should go full STR accessories or full Vit, or if I should mix and match? I'm going 25 STR 15 VIT for stat allocations.
Any help with this would be greatly appreciated.

Definitely both. There are times where you want more DPS, or when you just outgear something and the extra fending accessories becomes redundant. If you aren't a player who can keep up with gear, then an extra little bit of STR can help you manage hate when NINs are going hardcore single target and the BLMs are popping flares with weapons 15-25 ilvls above yours. I've played undergeared, top geared and am usually somewhere in the middle.
Fending is your standard and it'll take the edge off your healer increasing the likelihood of a win, or allowing you to manage large pulls (too many tanks think its the healer's fault they died during a large pull, when the tank's just not built for it. You can only expect so much carry from your healer.)
PLD training wheels rule of thumb from me is to make sure you can always manage hate (weapon damage being the biggest factor, followed by STR), and if you can do that, focus on mitigating damage when looking at your stats. From there you can lose the training wheels and use your experience to know when you can trade off some mitigation for additional DPS.

Also, its good to have STR accs for soloing, just to kill things faster. But for levelling in dungeons, prioritize Vit accs over STR. Don't be scaed to mark mobs for kill order also if youre a bit uncertain when there is 2 single target DPS. As adds more difficulty if they are pewpewing 2 different mobs.
But tbh, optimal accesories for tanks are either crafted Vit accs with str materia. or crafted STR accs, with VIT materia for the best of both worlds in one package.

Grab both and save up money to get rings and meld them for a mix set.
