Clearing Out Inventory
Completely noob questions here but I just want to make sure. Those Allagan Pieces have no other purpose than to sell it to vendors right? What should I do with my armor and weapons that I don't use anymore? I'm not really familiar with creating Materia yet so i'm not sure. Is it worth it to create Materia from low level armors? Should I just sell them instead? Any other tips to clear out inventory would be great! Thanks!

Sell the Allagan pieces to vendors.
You should convert gear you dont intent to use anytime soon and if you want to sell them or keep on stock for eventual later purposes is totally up to you. I personally kept all crafting/gathering materia I got along the way and sold others on MB. For relic and melds of crafted gear I bought the materia if cheap enough or went to soulbind some sets.

Allagan coins: Yes, their only purpose is to sell them for gil.
Converting gear to materia: If you've used a piece of gear long enough for it to reach 100% spiritbond, then you can convert it to materia, provided that you've completed the level 19 sidequest Forging The Spirit in Central Thanalan. You can't control what type of materia you get, but even the nearly useless elemental resistance ones are worth more than the few gil you can get from just selling the used gear to a vendor, and if you get one of the better types of materia it can be far more.
If, when you out-level and replace a piece of gear, it's not quite up to 100% spiritbond, so you can't convert it yet, but is getting really close, then keep it for a bit and switch back to that temporarily while doing simple content. Then when it hits that 100% spiritbond, you can do the conversion. The only time I'd ever just sell a used piece of gear to a vendor is if I got a better replacement so soon that the old gear has a really low spiritbond %, and it's something that I won't be using again later for leveling another class.

Couple of follow up questions. Clear Demimateria has no other use than to sell it as well? I converted my gear and now I have my inventory full of materia. Should i keep them or sell them? i got a ton of I materia and a couple of II and III.

Hang on to the materia, low-level ones are mostly worthless, but if you haven't already unlocked it you can go to the same goblin camp where you learned about converting and he'll exchange 5 materia for a random one. Sometimes what you get out is still garbage, but there's a chance at getting a higher-tier one in exchange. Also for anything with secondary stats on it, check the market board prices, people get through lots of materia melding for relics and they can be worth more than you might expect.

Reopening the thread for a related question. I'm going to clear out my armors and weapons now and I want to know what you guys think on how I'm planning to go through with it.
So here's my priority list, 1 being the highest.
1. Keep it for leveling purposes
2. If it has value in the market, sell it there.
3. Convert it to materia
4. Deliver it to the grand company for seals
5. Sell it to an NPC
6. Discard
What do you guys think?

Personally I always convert it if possible.
My order is usually:
Convert
Seal hand-in (unless seals are full)
Desynth
Sell to NPC (Only works if it's "bound" so I cannot sell it on MB and don't want to keep it for leveling)
Discard (when I'm too lazy and it's "bound)
I never keep anything for leveling unless it's a rare dungeon drop because who cares, and also materia goes for a lot on MB always. Remember you cant sell bound items on the marketboard, so if you've used it even once during a battle it won't be able to sell there.
