Being in Australia, if I was able to purchase a copy of the physical collectors edition from the US, would I be able to activate the early access code here? Or do I technically fall under EU?

You can use any code on PC, but it must match the region of the code you registered with first.
If you are on console then the code must match the region of your PSN account, which europe will work
