Better ring for T11/T12
Everyone in my LS refuses to answer this question ever since putting it to light that there is a ridiculous minimum HP to survive T11 and T12. I was told to go for one of the new platinum rings. Either Vit ring with Mind IV materia meld or Mind ring with Vit IV materia meld. Right now I sit at ilv120 SCH so I've been trying to determine which ring would be better suited for statistical advantage for both surviving and keeping my healing where it needs to be.

Well, direct answer to topic:
Healer ring with Vitality materia is better. The healer ring has Crit on it, while the tank ring has Parry. So it should be a no-brainer which one's better for you as a scholar in general. Additionally it gives you +3 accuracy as a bonus.
That aside, what do you need so much HP for? You're going to need one of those accessories for Turn 13 anyways, but you're not even there yet.

Not yet, I've been trying to find a group to clear T9 but one of my endgame LS keep picking up new people when some one else doesn't show, which been making it difficult to clear. In another endgame LS that's already on FCoB, one of them were looking for a SCH but with a min HP requirement of 6.3k. Pretty ridiculous, I didn't even know it was possible. Gear wise, I'm trying to make sure I'm absolutely ready.

It's probably to prepare for T13. For T10-12 there's nearly no HP-checks. But for T13 it is recommended to have at least 6.1k HP as a scholar - Personally I recommend 6.2k.
With your gear, you're going to need two accessories, though. With your current gear you have 450 Vitality. That is equal to 5852 HP*. With one ring you'll have 6091 HP. With two accessories 6330 HP.
Here's the formula for you to work with yourself: HP = 14,501vit - 1144,6
Something to keep in mind: party bonus is 3% as well as added vitality from food

Oh, additionally:
The scarf and bangle are the better choices for White Mages
The earrings and rings, on the other hand, are exceptionally good for Scholars.
If the group is expecting you to off-dps as a scholar next to your healing game, the earrings and rings are probably the best choice for said role. Even if you're going for the cheaper melds and double them as accessories for T13, you can get +16 vitality and +15 accuracy from each of them from just materia. If you have 2 rings and a pair of earrings, you'll reach 452 accuracy with your current gear. That gives you pretty decent accuracy for T10 and 11. You will even reach 474 accuracy by using lavatoad legs (or 473 with stuffed cabbages).
Something to keep in mind when melding your accessories next to vitality.

Your HP with food and a party is fine for t10-12. As suggested above, you may need crafted jewelry for T13 melded with VIT. You can also spec full VIT and equip fending accessories (Shiva bracelet is good) if you can't afford the crafted. Both options work fine and is just a matter of preference.
