I'm not sure if there is a way in the settings to know if a pet target indicator is on, except manually assigning and remembering by action. And sometimes it happens when Sic is not properly executed or lagged.
I would suggest adding a small pet indicator over the target list to show the target it's engaged on. This will give better visibility during large pulls and during boss fights with adds
