Just got to the point where I got to pick a grand company. I picked Twin Adder based on speech and my starting city but just was reading that immortal flames is better for casters? Is that actually the case and does the decision even make a huge difference in the end? I'm tempted to try and see if I can switch but not sure if I should?
It doesn't really matter at all, at least from a functional standpoint. The Flame Elite caster gear (awards for hunts) seems to be pretty popular so I'm guessing that's why most people choose Immortal Flames. Twin Adder gear tends to be odd shades of yellow and brown. Definitely not the most attractive of the 3 Grand Companies (there are a few gems in there, but no many).
Functionally speaking, the only differences between Grand Companies:
1. The cosmetic look of the gear you can buy. Grand Company gear has equivalent pieces in each GC but they do look different (eg there may be, say, a level 37 wand available; there'll be one for each GC, but they'll all look different. The substats may be different on some gear but to be honest the difference of substats is functionally irrelevant except on much higher level gear anyway)
2. Which major city your HQ is located in (For teleporting costs, etc.)
3. Who your allies are if you ever queue for Frontlines. It's a massive 3-team PvP mode; you'll be paired with other characters with a matching Grand Company alliance. If you have friends playing the game and you plan/want to do Frontlines with them in the future, find out their GC allegiance and stick with them now.

Thanks guys. Just going to stick with my choice as it appears to not make much of a difference strictly speaking.
I don't think it matters much anymore, but it did in 1.23 when the LT weapons were really good. Twin Adders would have been the best for whm i believe, and Maelstrom had a good pld sword.
