The closest thing I can think of are allusions to other games.
At the Adventurer's Guild in Ul'dah there are two adventurers discussing their strategy for an upcoming job, they say: "Cut the ropes to the bridge, send the beast plummeting, save the princess" and "Sounds easy enough. What's in it for us?" Their strategy is a reference to beating Bowser and saving Princess Peach in Super Mario Bros :D
There are lots of pop culture references in quest and achievement names, but I appreciate that this one is actually in the lore of the game, in spoken dialog.

Not little known, but largely awesome. His body of work is impressive to say the least.
There's an NPC with the "arrow in the knee" joke somewhere in Eorzea. I forgot which guy had it..
Jehantel, the BRD Job quest NPC in the South Shroud says it as part of the cutscene for the quest to unlock the Job. Which is appropriate when you think about it. ;)
As for other injokes, allusions and references, this page has a great deal of ones that are known, but there is so many being constantly added, this list will never be complete.
The final boss in Sastash HM casts a move "Strangers Tides" and when you get hit by it, it says "World's End". The beautiful Pirates of the Caribbean reference

There's an arcanist in mor dhona who wanders around looking for her Carbuncle. Said carbuncle spawns in certain places randomly. I think she was at Wineport a few patches ago
The ultimate attack of the final boss of Tam-Tara Deepcroft HM is called "Red Wedding", an allusion to the infamous scene in the book series "A Song of Ice and Fire" and, later, its TV adaptation, "Game of Thrones".
I dunno if its an easter egg or anything, but i enjoyed Jacke (ROG GM) and his comment about people coming back to him in their underwear after becoming a Rogue.
