Why do Rogues and Ninjas kick more than Monks?
To be stylistically different is likely the reason. I suppose that case could be made that Kung-fu, the martial art most commonly associated with monks is more about punching than kicking, but that is a rather weak correlation in my opinion.
ninja are more known for their acrobatics? i honeslty have no idea lol.
Agreed. I keep calling Rogues Monks by mistake because in my mind "Kicking = Martial Art". But I'm not complaining, they look awesome.

No, you cant choose that as a starter class.
Well, both the monk and the ninja uses martial arts. A monk is usually a peaceful person, very religious and non violent. So why do they actually use their martial arts at all? Even tho they trained it, they usually did not resist if someone tried to hurt them :P So I guess the kicking comes from different styles of MA :)
You need to have a combat class at lv.10 and have done your lv.10 class quest to unlock class changes to get rogue.
If you are starting out, I would suggest you start as pugilist and finish the story quest to 15. When you can travel to Limsa, grab the Edelweiss quest to unlock Rogue and start leveling that. Once you have rogue, it shouldn't take more than 2 or 3 hours if you use the hunting log, guildhests, and fates to reach lv.15. The 50% xp bonus comes in handy. As a bonus, you will immediately qualify for Ninja at lv.30.
I see monk as more like Bruce Lee and Ninjas as...well ninjas : P
Alright thanks that helped a lot im lvl 50 paladin and im not new to game I was just trying to figure out how to get Roque. I wasn't sure if it was added yet so tried to create character
