Coming back to game. Good server to restart?

Hey gang! I played FFXIV:ARR from launch up until about January. I got really busy with RL stuff (got married, bought a house, etc.), but now I'm finally finding some time. My main was a max level PLD in pretty good gear when I left. I logged in yesterday since it was the free weekend, and I am lost. It got me thinking, I'd really like to play through the game again on a new character to get caught up. That being said, I'd like to restart on a server that is highly active at all times. Could anyone please make a recommendation? I hear good things about Exodus and Gilgamesh. If it helps, my timezone is EST, and I am not a legacy player. Thanks for your time! ^^
