In the game, I've been seeing the chocobos helping with attacking, how is that possible? I thought they were meant for riding on.

It's the same chocobo. After you get your bird from the main scenario, you do a quest that allows your bird to fight alongside you in the field.
You can unlock the chocobo companion by completing the Lv.30 quest, My Fiesty Little Chocobo, by the Bentbranch Aetheryte. You must have your chocobo already for this quest.
You also have to buy "gysahl greens", purchased from the female npc you interact with during the quest.
Just a fair warning, having your chocobo companion out will lower the EXP you gain from kills. Can also only use it in open-world content (read as: No duty finder content, no instanced story/quest battles).
I should add that the lowered xp is only because the chocobo essentially counts as another party member. It's not a drastic reduction in any case.
It's actualy 25% which is pretty big chop of your XP gain if your aim is to level up quickly. On other hand it might help you to clear content / kill mob which you'd be unableto do on your own and gain more XP overall so it might (or not) ballance out in the end.
