Hunting Log Not Tracking Successful Kills

I've been trying to complete my Rank 5 Thaumaturge hunting log and there are several enemies on the list that aren't crediting as successful kills in the log:

1. Giant Logger
2. Iron Tortoise

Is there some sort of objective that needs to be complete in order to fill out these items in the hunting log? I've unlocked Rank 5 and killed about half of the enemies listed.
