On certain classes, it is screwing things up due to when certain things such as buffs appear.

Maybe I'm showing my ignorance here, but why on earth would you want to disable that? As a WHM main I'm constantly queueing up my next spell as the current one is finishing. And when dpsing (as whm or regular dps), not using the action queue is a big dps loss. That's why most people don't recommend using macros at all for those sorts of things.
....have I just been playing since PC-Beta without one of the key features or is this just a console thing? O.o I always have to press the key I want and when I want it but no DPS loss since very few attacks can be done at the same time anyway. Seriously not ever come across this but intigued to find out how useful it is.
the queue they are speaking of is not console specific and works in this way
you start to cast 2.5 sec spell > you hit another spell at 2.0 > when the cast is over at 2.5 you start to cast "queued" action
if you go with macros it goes like this:
you start to cast 2.5 sec spell > you hit another spell at 2.0 > game throws an error that you can not use ability while casting
And yes, BLM is the biggest isue. It isn't just Fire 3 proc, it is also thundercloud proc. And that is exactly my point. I'd lose DPS if I had to stop the cast (I don't stop the cast). In addition, with the thundercloud proc, I can't just stop it. Since I usually use thunder on smaller adds to just add a bit of damage on them and increase my proc chances since usually thunder 3 is a waste of time on them. And it is a complete waste of a proc to use thunder on the proc over thunder 3 since it drops my DPS if I use thundercloud to cast thunder instead of thunder 3.
Essentially this is usually what happens. I use start casting and then I go to use thunder just to have it on something, right before the cast finishes, thundercloud procs and then I cast proc bonus'ed thunder with no ability to change to thunder 3.
As for interrupting, funny thing is usually when I do want to interrupt (like I realize my MP is off for the double flare due to an unexpected mage's ballad or casting Medica 2 and then having the debuffed/sac player walk into your casting area), trying to cancel my spell fails, lol. I mean, I've tried to cancel a cast early on before by moving. Spell didn't interrupt. This isn't the most common thing, but it does happen from time to time.
Don't stop casting, use it at next GCD. It is not a DPS "loss".
