Wind up Bahamut Minion

How do you make the minion raise the shell of dalamund from it's head like it shows in the promo picture?

Dalamud and bahamut are different minions and are awarded for purchasing different soundtracks.

He does it randomly when idle from what I noticed. Didn't test out emotes to see if any will trigger it manually though.

No, he is correct. Bahamut starts out partial inside Dalamud when you first summon him and will occasionally raise it above his head while idling.
