I can't even attempt many of the high level recipea because the game tells me my control isn't high enough.
I have hq highest level gear obtainable from the AH but I'm still about 40 points short.
What do I have to do to be able to pull off these star ranked recipes?
Two-star recipes require more Craftsmanship (for 40-dura synths) or Control (for 80-dura synths) than what a full set of HQ gear can give. You can see how much is needed at the bottom of the crafting menu, under Characteristics. But assuming you have a blue primary tool, HQ militia secondary tool, HQ iconic gear set for your craft, and an HQ Raptorskin Merchant's Purse, that should put you short by 35 Craftsmanship or 15 Control.
You can either use materia to bridge that gap, or eat food.
Foodwise, I think for Craftsmanship, you'd have to use an HQ Rolanberry Cheesecake. Craftsmanship +15% (Max 40).
For Control, there are Salt Cod Puffs. NQ gives Control +8% (Max 18). Or maybe Dagger Soup or Pan-fried Mahi-Mahi, if those are easier for you to come by/make.
Use materia.

If you plan on cranking out recipes, lots of two stars.. use materia. If you plan on just doing a few recipes for like FC or personal use, then use food. :)
