I am wondering how viable it is to equip dps gear with a focus on strength (jewelry mostly) as a warrior/paladin to increase my damage and pressure output. I figure I already have way more damage reduction than other classes due to cool downs so why not gear for damage dealing.
Also, which class (Warrior or Paladin) would deal more damage if specifically gear for strength?
Thoughts?

I would assume Warrior would deal more damage but I can't give up my ability to stunlock as Paladin.
You are last to die...so ofc you push your offense up hard.
WAR has Berserk which boosts Attack Power (+STR) by 50% as well. I would grab STR on both but a WAR would do more dmg with it due to berserk and being more offensively designed.
MRD wins hands down in burst department over any other class. Full Swing, Berserk, Internal Release, Raging Strikes, Blood for Blood, Straight Shot and Storm Eye will eat anyone up Morale or not.
The biggest problem with pld at the moment is weak damage as they're about damage over time which gld suffers from atm. Until we can get our hands on some better stuff i will say pld will be the weakest link atm.
One of the goals of a paladin or gladiator in pvp is to lock down the healer, but as of late latency has been pretty terrible and auto attacking is easily covered by insta-cast regen/Eos (takes a while to kill these guys) so there's very little pressure tbh. They could make some changes especially to silence like a 6 sec effect or add something along the lines of protecting other members of the party with a usable timer but i'm asking for quite a bit.
Best route as a pld is to ditch the stone and get all your other class abilities and know when to use them because once you get your hands on a whm/sch/whatever and they get loose, they are hard to lock down again for a while.
