In pvp. I've only done a dozen or so random matches, and so far my strat is chase down healer/caster and stun/whack them. Is that the most that I can do? Any tanks care to share what they do in pvp?

That sounds about right. I usually end up aggravating the healer while DPS focuses on BLM or SMN. Then they come after the heals.
If I see an opportunity to finish off a target that I'm not focusing on with, say, Mercy Stroke, I'll take it. Just gotta be careful not to tab target through a slept enemy.
BTW... I don't wanna hijack your thread, but I'd be curious to find out if other WARs are switching to MRD for the cross class. I've done this and I really like it. Also got a bunch of macros set (I play on PS3) so all of my stuff is on my circle, x, etc buttons and I can keep mobility with my left thumb.
As a warrior? Warriors are beasts in PvP.
Holmgang+stun a target being focused by the rest of the team when they're low on HP and they're goners.
Storm's eye on healers so they heal 50% less.
Stun a target casting a critical spell like raise, sleep, whatever.
And also obviously help DPS down the focus target. Warrior has good damage with berserker and no defiance.

The proper PVP term to use for a tank in MMOs is to be a 'peeler'.
As a Warrior; you have burst DPS, 1 stun, and Holmgang. In my -opinion- a Warrior should always be on the healer unless your group decides to burst down another role because you have someone who will sleep the Healer > wait for Purify > sleep again. Something along those lines.
- Save stun to "ensure" a kill; if the group's target is low. Stun the healer.
- Save Holmgang to "ensure" a kill; if the group's target is low, use Holmgang when the Healer is on the opposite side of a wall from said target. To Line of Sight(LoS) the Healer/prevent him from curing.
- Don't just use your Berserk whenever, use it to finish someone(during stun or if they're low enough with no real way to escape/prevent the dmg).
As a Paladin; You have stuns, you have Cover, and you have Stoneskin(Yes, stoneskin spam can save a focused target's life, done it myself more than a few times.) In my -opinion- a Paladin should never leave the Healer unless it's to stun some DDs on your Healer or DD.
- Same notion with a Warrior stunning, save it to "ensure" a kill(If you're stunning the Healer.) Otherwise, use it to save your team from dying.
- Cover; Cover your Healer when they're in(From being Heavied or Stun locked/near death). Try to couple this with your other Defensive cooldowns because you can be bursted down.
- Stoneskin; Again to save someone. A single stoneskin won't do much at all, but spamming it on the same target will.
Again, just my opinion.
Ty for the replies all, its good to confirm I haven't been doing it totally wrong. I'm going to try going as mrd rather than war for all those cross-class skills, see if it ups my healer-harrying abilities ^^
yup.. paladin can use cover, flash, stun and skin stone to defend targeted allies. course not mentioning pvp abilities.
- cover make sure you stack it with def abilities else you go down fast.
- stun target and move to next target.
- skins tone will get the dps attention on you.
- flash....well
