I'm asking this because I just joined Twin Adder and all the bonuses on the Duty list show DPS.
It looks like the Grand Companies are not equal in rewards and that working forward for basic things like a Chocobo is a .... sight harder if you get the wrong one.
Any help on finding the right one appreciated.

You mean the bonuses for the duty roulette? Those have nothing to do with your grand company. It's just a question of which role is most in demand (i.e., the least people in that role queueing for that category) at that time. You happened to check when there were more tanks and healers available than DPS.
For the most part, the GCs are all about equal. The only real difference is the gear you can get, and that's not slanted so heavily that it's something to worry about. GC gear is mostly useful to fill in holes when you get unlucky or lazy gearing up as you go, or to look like the GC NPCs.
Immortal flames have a bit better gear in it for healing based classes. However, later you don't usually end up using it. But perhaps as they release more ranks this will be useful again.
The only difference, really, is the appearance and set bonuses on the gear. In regards to set bonus, Gridania might offer +Determination while Ul'dah offers +Accuracy. Something like that. Otherwise they're basically identical.
Except for the gear's appearance. Each had its own color scheme.
