Here's the gist of it, While crafting I successfully used Advanced Touch (Nothing big right?) But this time, My character jumped up and did like this victory fist pump/cheer and a noticeably different tune played rather than the usual ding of a successful touch action.
I didn't get anymore quality than usual, nothing special happened what so ever.
I didn't use any buff or emote or anything like that, there was nothing I could have possible have accidentally clicked since my buffs are one one hot bar, and emotes aren't even hotkeyed at all.
It wasn't a terrain glitch, it was an obvious animation.
It's happened more than once, but the first one or two times it happened, I was zoomed far out and wasn't paying attention so I was sure it had actually happened or if someone was jumping behind me.
My Question is, what is it, and why does it happen?

I know there is a different animation if you complete craft with HQ but as you've been using touch that's not it. Could be be that you've just completed the spirit bonding with one of your gear items? Have you checked the system log? What was the status (good, excellent, etc).? I have full log details on when crafting (so I can trace back what happens) and it will show there as well as on the screen in the pop up message.

I've had delays in animations and then got to watch my character try and catch up, seeing 3 or 4 all at once. It makes for an interesting show. I don't know if that's what you experienced or not though.

They need to add one more animation for crafting: Whenever you have 97-99% quality and get a NQ, I think the character should do a /tableflip emote.
The other option is to manually type the /tableflip emote in, and have the animation for the emote take your gear durability down to like 2 or 3 (almost broken, but need to get it repaired). It would be completely optional, and sometimes I need a release after something like that. And I'd rather pay some in-game gil for a repair bill than real money for a new keyboard XD Yeah, I put too much thought into this..... -

Yeah, I was usuing my usual crafting gear so all my stuff was already spirit bonded. It was just a normal quality orb as well, even if it was a red or rainbow, it's never done that animation before. When the animation played there was nothing more than the usual text either. Advanced touch successful, 360 quality, etc. Nothing out of the ordinary.
