Monk

Hey so I looked up how to be a monk and it said I need to have at least a 30 pug and a 15 lancer, so that's what I did. I've done the level 30 pugilist quest and the level 15 lancer quest, so how do I get the title "monk".

Go back to the Pugilist guild and someone should offer you a new quest to unlock Monk.

The Pugilist quest guy gives you a quest to go help some Scholar at the Goldsmith Guild and the guy there teaches you how to be a Monk.

It's not a title though, it's a class/job.
