Probably just keep doing what i was already doing. no longer being able to play as another class would be saddening, but i'd probably make do with drk or paladin.

then go on an adventure to find the highest spot I could climb on. (and wonder how to get down)
I would go train in the void until enochian is a passive buff then learn a spamable void flare and cause the next calamity.

Honestly, I started as a White Mage because it felt right, and it would feel right given those circumstances as well. Healing is therapeutic. Maybe... maybe Scholar instead. That's probably a little more in line with my personality.
My only complaint is the limit on gatherer/crafter classes. My ego wants to make weapons and armor, but in reality I'd probably do Botany or Fishing, and Cooking or Alchemy. Frankly, I'd be perfectly happy being all gatherers and no crafting.
Create toliets and showers because hygiene will still be an issue.
I would most likely start killing and eating things like Carbuncles (I think they taste like Sprite Remix) and Chocobos. I will go full Charles Darwin in the Galapagos and eat everything. I would also probably get a lot of hate for eating people's chocobos and Carbuncles and minions and the like. In front of them. While they stare, horrified and crying.
I would carry on as I normally do tackling both combat and crafting challenges. I main both WHM and SCH. I can't choose between the two, sorry :p And crafting/gathering is an all or nothing affair. If I have to choose between crafting or gathering, I'll choose crafting.
The only real addition/change is Hilda and I would get married <3
