I think I found a solution
So after reading through the forum thread I think I solved my issue. Steps I took include:
1. Disabled CPU Clock boost in BIOS (Im on an Intel 8700K rig)
2. Disable XMP Profile and manually set my DRAM frequency
3. This is the one I think cause my issue mainly, Disabled Discord Overlay

Hotfix broke things again...
Had crashes every 1-5mins for all of patch 5.2, most of the time errorless. I had played on DirectX9 to resolve this.
5.3 released, so I decided to swap back to DirectX11 because Dx9 looks like garbage and also doesn't handle lots of player models in an area well. (Feels like I'm playing on console when I'm on a high end pc...) Well, to my pleasant surprise, in patch 5.3 DirectX11 worked! No crashes at all! Zero! It was paradise! My game looked good again, and ran smoothly.
Then patch 5.3 Hotfixes happened.
Logged in tonight for the first time since the hotfixes were patched in; I've crashed 5 times already, some errorless, some not. Going to try some various troubleshooting again like I did last time before eventually giving up. (2-3 hours troubleshooting on several nights, full reinstall, all the nvidia control panel settings, ffxiv settings, frame caps, different resolutions at different framerate caps, different monitors, removed overclocks, moved ffxiv to a different drive including SSD... everything.)
Looks like it's back to DirectX9 for me. Something's gotta get fixed SE and I don't think that it's something that I'm in control of.
