I used to use it a lot. I would change from a lala and quickly go back to a lala bc I missed being a cute potato. I leave it alone now since I know I’ll just go back to lala anyway. I have made other races in character creation for funsies/retainers but none have made me want to change my character.
I've used a fantasia pretty much once, when I decided I didn't like the Lalafel visual perspective and changed to my go-to standard of Miqo'te (not my current avatar on the forums). It was just hard to adapt to being 2-3 feet shorter than your normal Miqo'te in-game visually.
Every few months, usually, switching between Hyur and Hrothgar. Thinking I'll stick with Hrothgar until Endwalker though at the very least.
Not a single time.
I usually stick to the characters I create. The only thing I sometimes adjust are hairstyles or a little bit of the make-up ^^
Today I used fantasia for the first time, because I wanted to change a small detail on my character.
And right after I went to character creation, I just realized that the small detail was already effective. :D
So 7 € for nothing (well, I change my char voice, so not really nothing).
Just once.

All of my characters exist in outside game roleplay (tabletop, IRC chat rooms, etc) so they all have set looks, personas, and appropriate Jobs. I've never used Fantasia on my Thighlander. The most I do is change her hair up here and there as I adjust her glams.
If I want a different perspective, I make alts.
The one time I did use Fantasia was to change a set of alts who are twins from Elezen to Viera.
