If he or she is willing to transfer and stay in new server or you willing to transfer, you should make an alt. It can give an idea of how that person will behave with you in game. I can say by experience that you having and alt on another server while chatting and leveling is a pretty accurate example of how that person actually act with you and people around the two of you.
