Silver Sovereign are not on the market, I just went through all of the fish to check. If you look at the tool tip for the dye fruits on the market, they don't have the untradable tag on them.
Where are you getting this information from? If XIVDB, their info. is wrong. According to the official Eorzea Database, the fruits are tradeable:

I can confirm that the fruits are tradeable and you can place them on the market. After using Grade 3 Shroud Soil I got 36 of each seed that I planted. You are able to feed your Chocobo multiple times with the snacks basically to queue up the color you want him/her to change to and then after the last food snack given you wait 6 hours and the transformation will be complete.
Unfortunately, I only planted blue fruits... so I fed my Chocobo 3 of the darken blue color which should increase the blue by 3x whatever increment. I assume that my Chocobo will likely change to either "Gobbiebag Brown", "Lilac Purple" or perhaps "Lavender Blue".

I'm going to be honest, I don't remember the soil I used for this bed, but I'm almost convinced it was a side-by-side mixture of the chamomile I had near it with G3 Thanalan Soil that was planted prior to the patch, and the O'Ghomoro Berry seed with G3 Shroud soil planted after that must have made it produced 9 curiel root seeds and 36 O'Ghomoro Berries. Either that or it could have been the Xelphatol Apple with some sort of Shroud Soil added in to produce it. Never seen this happen before considering I've only used G3 Thanalan Soil for all cross-breeding excursions. I'm baffled, dumbfounded, and completely mind f***ed to say the least... I've never obtained more than 1 bag of cross-bred seeds before from a single bed. Unless I'm reading this wrong.
