Carbuncle is a familiar simply formed out of aether. I feel like it is possible to shape aether into pretty much anything you want. So a carbuncle is basically a creature representing the summoner made out of aether. I assume the Allagan summoners started with this, then they became more ambitious by using different amounts of aether to create egis. No doubt there were probably casualties and accidental tempering; but they needed to do what they needed to do.
Though one thing has been eating at me. So far, there has been nothing to indicate that anyone in this story is specifically good. It is entirely possible that Louisoix finally had a chance to speak to Nael and the two came to a resolution. We may have to fight both later on or join them, we may have to do both.
Though one thing about all of this talk of Allagan tech controlling dragons, does anyone else think of Rowena and Ishgard?

It seems that the same type of magickal technique has been called many different things across the ages, and the way in which they actually practice the magick varies, as well. By reaching into the lifestream (aetherial network), mages can essentially create lifeforms. There are many types of familiars.
Modern-day arcanists practice the art by analyzing reality and breaking down all things into geometrical terms. They are able to then design with this arcane geometry - using their understanding of the mathematical representation of the entity carbuncle to call it forth. Compare this to the Nymians, whose familiars were faeries whereby the memories of both seemed to resonate within the Soul of the Scholar crystal they carried with them at all times. The summoner soul stones, too, held the memories of the mages, but did not share it with their familiars - for their familiars were of a radically different kind. Summoners brought forth Egi - biddable, controllable entities molded by primal essences diffuse in the lifestream.
To answer your question, Egi molded with primal essence is not quite the same thing as the concentrated aetherial essence itself. Garuda-Egi is an Egi that contains Garuda essence, it is not Garuda.
Of course, if my thoughtform theory holds any water, these all might be differently used, differently behaving, differently manifested forms of the same phenomenon.
