generally i just try to match the lowest prices and avoid undercutting. because i don't want the value of my goods to decrease just to make a quicker sale.
also if its just one person doing some severe undercutting (like 1k less or something) i just ignore those because they'll generally sell fast and my 2nd cheapest priced ones will still sell regardless.
The thing is, why would you do that? hell, if I need gil, i hop on my weaver and make some threads/cloth and sell those, cuz they sell pretty fast and are cheap to make. Sure it's small bits of gil, but it adds up. I dun spend forever making millions, just enough to buy w/e I want whenever I want.

I change my stance, the game is boring and clearly there ISN'T enough content.
I could be wrong but I thought even if you list it at the same price the person who lists second will be on top? so undercutting isn't really a valid excuse for wanting to be on top
I don't know if it's appropriate to post this here but I did a search instead of making a new thread. Why are people undercutting to such a degree lately? What purpose does it serve? I ask this to the honest players because I know some undercutters are RMT and that's explanation enough but why do legit players do it?
Why is the market always a race to the bottom? If people just understood that waiting a few min, hours or days for a sale is ok you could make a lot more money. If the market price was stable then we would all make more gil. But if everyone keeps undercutting your going to have everyone making 0% profit. Be a smarter player, if you grind item drops expect to get paid for it. If you craft factor in shard and material costs. It's idiotic to see things selling bellow NCP price. I go to the market and think I'm looking a a used item buy & sell, all the time.
