We need roaming chocobo mobs. Mostly so I can have revenge for the times my "trusty" steed left me high and dry in bad situations in FFXI. Other than that, hydras, worms, and poroggos would be neat additions.
Mandragoras!
Also more arcane types of mobs (magic pots, snolls, enchanted weapons).
Base the design of the Kraken on the Octomammoth from FF4

I think it would be a pretty fun fight, killing the 8 tentacles then the head.

Oh I missed this post.
To answer your question. Yes I have played other Final Fantasy games, and I like all the "Weapon" type bosses. It is just my personal preference. FFVII series happens to be the only one with this many weapon bosses, so this is where I based my suggestion.
I personnaly (not saying your choice is any less valid) don't want that many weapons, Omega and Ultima are FF, the others give the staples less of an impact, what I would like is Omega and/or Ultima to be the kind of mob only the most dedicated players will see, kind of like kings in FFXI, AV etc to add more atmosphere when you fight them (and not like Ultima where the effort wasn't worth the reward as much as the alternative.)
