DNC is the easiest class, period, when it comes to the skill floor. Not much you have to deal with.
None of the jobs should be ideally played with 3 buttons but in the general concept of easiest in each role:
Tank - Warrior. Maybe in previous expansions it would have been Paladin but Paladin has maintained some of its niche skills while also gaining some complexity meanwhile Warrior has just generally become a more simple job. So I do not think Paladin is anymore the 'easy' job, though I would still give it credit for it's potential stability (in that you can pull groups through a number of situations due to skills like clemency or cover, both of which fall more into the niche since in a normal regular day you shouldn't have to be using them).
Healer - White Mage. You might be able to even do the 'healing' part of your job with just three buttons for all but some ex and harder content lol. Uhm.. hopefully you're using your other skills though. . . :P.
Melee DPS - Ninja. Unless you have trouble remembering the ninjutsu combos (which are easier to remember if you think about what they end with rather than the whole pattern).
Physical Ranged - Dancer. Pretty straight forward, proc based, get to feel like a bro.
Caster - Red Mage. Just don't cause your job gauge to break :P. Also nice bro moments with raise candy.
BRD. Press heavy shot until you see marching ants around something then press that. Also never use Duty Finder. You'll be fine on the world map though.
Or if you're into fighting games, there's always Divekick.
I would honestly say dancer.
It has those burst-y phases to it where you might find yourself pressing a lot of buttons but other than that, it's a pretty easygoing job.
En avant is what makes it for me. Just really fun to dash about.
Then you should try a tank, especially Dark Knight, the rotation is literally a 3 step combo. Sure, there are two other skills wich you have to use pretty often, but they are ressource-based, not time based. And all the defensive cooldowns are situational as well. And most of the time you press the same button for defense anyway - The Blackest Night, DRKs powerfull shield.
