Overall I like Idyllshire best. Revenants Toll and Eulmore feel slightly claustrophobic. While Rhalgers Reach doesn't and I love the pool, it's layout isn't simple enough for a hub and I love Idyllshire's Sharlayan architecture more.
First is between Revenants Toll and Eulmore. I'm going to give it to Revenants Toll since you can mount up there. The worst if Rhalgers Reach... it's sooooooooooooooooooo ugly. Just brown everywhere.
Not a big fan of any of them to be honest. There are things I like and dislike about each of them, but generally speaking my need for these hub's exclusive functions are not as great as the general functions we find at their sister locations like Ishgard and the Crystarium. The Inns, Marketboards, and Armoire/Glamour Dresser are all features I use constantly while tome/token/scrip/custom delivery exchanges come at the most, once to twice per week. IOW, while they are hubs by definition, my own activity keeps me away from them even if I were to enjoy visiting them.
They have the greatest appeal at the start of an expansion/patch when we get to see all the new goodies we can earn, and they are absolutely wealthy with glamour options, and the incentive to go after them. If I had to pick one, I'll go with Gobtropolis. Khloe factor /endthread

I always liked Idyllshire. At least on my server, there was the "bragging platform" where people showed off their mounts, or their Alex armor.
The Crystarium. I love the music in that zone. Both day and nighttime. Even though I own the Shadowbringers OST, I still find myself hanging out in that zone just to listen to the music. Soken is a genius...
Eulmore, hands down. It's the only one that actually feels like an end game hub to me. The others were all right, but the only reason i would go there was to exchange tomes and stuff. Now i actually enjoy chilling at the hub sometimes !

I like the Crystarium because it's essentially a giant greenhouse but I agree it's rather barren of player activity, or even NPC for that matter. In the Shb trailers the main plaza looks like some highly populated farmer's market/festival, ingame though, it's a football field-size empty space
