The point of different mounts to me is so that when I am going from point A to point B, that I have a wide enough variety of mounts to make sure that my chosen mount of the day matches my outfit >_>
I too wish devs would put more focus developing new hairstyles instead of useless mounts. Viera an hrothgar still are waiting for anything new...
If someone want mounts then he should go play world of mountcraft, they have 10 billion of them.

If you gather, do daily beast tribes, do Hunts, treasure maps, fates, MSQ. You will use a mount at some point. Or you can walk everywhere. Point is mount drops are usefull.
Two not so subtle points I brought up in my post are that there are plenty of reasons to be out in the open world, and that without a mount you'll be using foot power and/or porters to get around in it. A mount is exactly that. A mount. It doesn't really serve much purpose other than glamorous transportation around the areas of FFXIV.
If you do ANY of the activities I mentioned, you need to be there longer than 5-10 minutes to accomplish anything. Furthermore, if you are only spending 5-10 minutes out in the open world when you make a trip out there, I am hard pressed to consider you an active participant in any of those activities.
The open world basically caters to the DoL classes, which is then used to fuel DoH. There is some combat content out there, but for the most part combat takes place inside the many instances and duties we queue up for. This is where the devs can really focus on making players utilize their kits during battles. And a mount, is often a reward for getting some of the more difficult combat 'chievos under your belt.
Try doing the new beast tribe in Rhaktika without a mount ^^
They look neat and are useful to have because they get you from A-to-B faster than walking or running. When you're doing something that involves a lot of A-to-B it's really convenient and of course flying mounts can get to certain areas more easily as well as some nice areas inaccessible by foot, even if in most cases those places are just to look at and in some, used in quests.
I feel the true test to see if there is a point to mounts is simply remove your mount from any crossbar or hotbar and you'll likely soon learn why they're useful.
Do they get as much mileage as they do in other games? Maybe not, I don't think it prides itself as a big open world game, like say, TESO and I don't think it needs to be, not every game would merit on a big open world approach where mounts get a lot more mileage. Would it be nice? Perhaps in some places, I feel like somewhere like the steppes might feel like a big open expanse like the Mongolian steppes its based on, the Azim steppes are just a small area of the whole steppe. And I wouldn't mind feeling like I could get lost in by heading even deeper into the shroud. But sometimes, that can be a detriment, eg. FFXI is a game that benefits heavily from mount use because of its long distances to travel between anywhere you can teleport to, but it actually meant it could take ages from getting from point 'a' to point 'b', whilst it could add the feel of a big expansive world and can be immersive, but once that wears off because you've been in that particular place a lot and your group is waiting for you, suddenly fast travel options seem so much more attractive. So much so that FFXI has gotten better for it over the years and nowadays has a much more vast network of fast travel options available so you can get where you need to more quickly.
But as your question was "what is the point?" and I'd expect the point would be plain to see. So it comes off as a pretty loaded question.

Also, most mounts are ugly af or just look dumb. Like, flying bed and variety of chairs, sometimes it feels like you're too big for a mount. Still waiting for flying toilet that does fart sounds while in air, that would be great idea on par with bed.
And there no armory to check them all, no mount drops from dungeons, literally 7 recollors of the same mount. As someone told, WoW did it better, you should check it out, it even have mount showoffs.
And yeah, people should understand that 14 love silly stuff and don't care about any immersion
