Why are crafting/gathering sets in Stormblood class locked?

It would be nice if you could glamour any equipment from DoL/H to a DoW/M seeing as it's glamour. Not actually wear it.

The equivalent tier of crafting and gathering gear in HW was class specific.

This is a pretty harsh limitation on glamour. Crafting and Gathering were the source of quite a few pieces that could be combined with something else to create looks. While the player base wants fewer restrictions, SE is creating more?

DOW/DOM gear has always been locked to class. Why couldn't DOl/DOH?

I can imagine that it will show up as ilevel 1 gear in the mog station with the requirement of having the class to the gear at lv 70. Maybe also to have the original script gear as an requirement to get the ilevel 1 version.

Because it is an additional restriction. I think that the glamour system needs to be easier at the point. Sure, you should not be able to equip the wrong gear for your joc/class/role. But, you should be able to use a glamour prism to copy the appearance of any item in the same armory salt - with the exception of weapons/tools, shields and secondary tools. This new restriction makes that even less likely.

A fair amount of people would wear dol/doh gear into dungeons to try to spiritbond it for materia even though I'm pretty sure SE made it to where that wouldn't work years ago. They'd wear normal gear to q with and changed after the duty started. I think that's a reason why.

After they finally add that cool cowboy top without all the stuff from the waist down....it's Gatherer locked :(

The point with this is so situations like "tanks running in battle looking like healers" doesn't happen. I think it's been debated before.
