Chocobo's should be the only mount?

I am fine with any mounts. It will only make the game more interesting.
Chocobos will hopefully one day be able to dig again, maybe gobbues can be used to climb cliffs and use certain shortcuts? lol

Would you ride on its shoulders or in a carriage is the question that bugs me?

Yup, I'm guna storm into Natalan and take out the chief NM with my floppy armed sidekick.

To be fair? I have no problem with any kind of mount, however I want most mount to have some unique ability, even if in the end it doesn't change much.

Example, Chocobos are faster, Gobbues can go up higher ledges, Ogres (?) can take more damage before running away, etc.
