Agreed with Red / Orange / Purple. I agree that Tiamat may be yellow, however; not purple. The horns are a distinctive shape, but Tiamat has lots, and lots of protrusions coming out of her face and Pink just has a big beak.
Quetzalcoatl is a solid guess given that it looks much like an Ixal, who also have Mesoamerican themes.
Shinryu also sounds like a good name to add to the speculation salad, though there's always a possibility that XIV will choose the historical branch where Shinryu is transdimensional and more powerful than all other dragons, perhaps tied again into Omega, perhaps how Midgardsormr got to "this star."

One thing to mention is that summoning something as a primal tends to change its appearance somewhat. Tiamat pointed out that the Bahamut she summoned was not the same Bahamut she'd loved. Shiva too looks nothing like the real mortal Shiva that Hraesvelgr loved. It's possible the Bahamut we know looks nothing like the original so comparing his images in-game to the art (which presumably depicts the seven children before everything fell apart) might be a futile effort.
Also in personality Primals are not exactly the same individual, since it mirrors how the persons praying to it think how their personality should be.
