All that'd prove is that the warriors of light are stupidly weak if 8 of them have to gang up on a guy that has been fighting one-on-one duels.

They look like horns to me, but it's awesome if they're already setting up the lore for this "new race".
EDIT: looking at her head, the "horns" now seem to be where normally the ears should be, so either they're horns on the side of the head or she's restyled Viera-like race with ears on the side rather than Miqo'te ear positions. If that's the case it could make the race a bit more interesting (a reference instead of a complete Viera copy). Which I'm ok with! ;)
The player character is stand-alone in the Hildibrand quests. I don't see why the fight with Gilgamesh would be any different. If Gilgamesh had been introduced as someone who assaults groups of warriors and steals their weapons, then we can justify it as a group fight.
Instead he's doing one-on-one duels and winning. It'd make sense for the player character put an end to Gilgamesh's winning streak one-on-one.

The Viera was only an example. They can still bring another mammalian demi-beastmen as another race.
As I said, from a story perspective, the player character being blessed with the echo and being a warrior of light would more than likely mean they have what it takes to beat Gilgamesh where others have failed.
Keep in mind that regular fighters lost one-on-one to Gilgamesh. The player character is supposed to be very much above "regular".
