Where was it officially confirmed there will be no seasonal items allowed? So far the only official restrictions I've heard was vague restrictions on armor weight class.

If cross class armor is allowed for vanity, PvP might be a bitch. Certain classes and targets have higher priority to eliminate first (depending on the PvP mode), and if you're forced to try and make out if that guy in the trash can suit is holding a scepter (BLM) or a radical (WHM), well ......... it's like a bus getting stuck behind a bicyclist on the road; it's just inconvenient for everyone >.<
I'm hoping the vanity system extends to DoH/L classes.
I guess standing there and taking debuffs and status effects while determining and marking which classes are which is a logical way to approach it. Not VERY logical, but logical nonetheless. Hypothetically (and purely speculative), suppose PvP groups all dress in the same vanity gear to be indistinguishable from teammates. I'm only playing devil's advocate, but people use some devious tactics sometimes. I'm not even sure about the details of vanity, so take this all with a grain of salt......
I think you'd know what class they are based on the spells they're casting.
Having PvPed extensively in two other MMOs, one where the vanity system has armor-type restrictions and one where there are no such restrictions, I've had zero problem telling classes apart, either based on the weapon they use, the buffs they wear, or the spells they cast early on. It's not as hard as you're making it out to be.

Having played PvP in a MMO with no vanity restrictions in that mode all I can say if you haven't been able to get an idea of what basic role your enemy is by their sheer mannerisms within the first 2 seconds you deserve to lose. Whether they charge you (melee dps/tank), keep their distance to channel/open fire (ranged dps), keeping distance and a little too focused on their team (healer), etc.
Not to mention are you saying you would be able to positively instantly identify a class by any possible stat based gear combination that class might wear yet would be completely helpless to identify them by all their other tells? And what of shared gear set designs, such as Darklight?
I consider the need for gear appearance restrictions to be able to PvP a weakness undeserving to be catered to, much less forced upon the entire population.

I don't know why a mmo would launch without a vanity system.
That being said I want the system that DCUO uses. It's simple and quick.
