Interesting findings:
NA really likes their Miqo'te males, dislikes Sunseeker female especially.
JP dislikes all, tolerates Sunseeker female.
EU is home to all cats.

I guess that's why choose them.

The eyes are quite eye-catching unlike fangs but there are also different marking, ear clasps as opposed to tattoos, difference in skin colour, different face features and lore.

For me it was the lore, fangs and their patch, in that order.

Fangs. Mostly fangs and skin colors, though I can't seem to get a single skin color for mooncats that don't have a weird cast to them.

My last attempt at making a more "Caucasian" skin on a moonkitty didn't work so well. Either has a really weird grey to it or a weird red to it and I don't like that much.

So... grey kitty it was.

Edit, I also don't like Sun Seeker's eyes. They kinda creep me out a little.

I much prefer Moon eyes, but Sun skintones.

Moon-kitty eyes look great on the girls, I think it's because their eyes are big and expressive. For some reason I feel I lost a lot of character on my male when I tried going back to Moon-kitty, and it really was in the eyes.

While I personally like Moon skintones, I definitely prefer the Sun-kitty eyes like you're saying - on males, at least.

WoW trolls, depending on tribe, are either covered in very fine fur or moss.

Yes, moss. Forest trolls have moss growing on their skin. Everyone else has fur.

I thought I remembered it said somewhere that Miqo'te skin is smooth, to differentiate them from FFXI's Mithra. They had skin that appeared smooth but was supposedly peach-fuzzy.
