No but seriously, I have a few, although watching the anime adaption of Valkyria Chronicles pretty much killed my interest in any anime released after it(post-2009).
A few of my highlights would be stuff like Gunslinger Girl, the anime adaption of Gungrave, Rurouni Kenshin, Gundam 08th MS Team, Blue Submarine No.6, Neon Genesis Evangelion, Haibane Renmai, Beck, Nodame Cantabile, the first half of Death Note, Serial Experiments Lain, Record of Lodoss War... I can't really pick any favorites, but these series should give some insight as to the types of anime I'm into.
I generally like period dramas, character-focused and introspective stuff, fantastical stuff, anything music-related.
I usually go for stuff that Madhouse or Production I.G., and try to avoid anything Beetrain does. Of course as I pointed out before, haven't watched anime in a long while.
Also, honorable hate mention. I can't bloody stand anything Ghost in The Shell or Skycrawlers. Anything that up its own ass needs to go away.

I'm sure there is more, but it slips my mind atm. Right now i'm doing a bit old school and watching slayers for the first time. I'm really liking it and i'm sure once its done i'll add it to the list :D. I've heard a lot of great things about one piece, I initially saw the dubbed and it was so god awful I have a bad impression of it. I know the subs are infinitely better but there is like what? 500+ episodes and thats a hell of a thing to jump into lol.
A lot of people have mentioned .hack series and I pretty much forgot all about that. I loved the 2-3 games I played back on the PS2 and with a lot of people mentioning it in here I think I need to start getting that series next when i'm done with slayers.

While growing up DBZ was my favorite. but as my tastes developed I started getting into Naruto and Bleach.
I would have to say my all time 2 favorite animes are Trigun and Cowboy Bebop.
They had an awesome start and finish. They didn't last forever and told the entire story.

1st: Dragon Ball, z, GT without question, even though I watched them all when I was young, the name Goku will always have a place in my heart.
2nd: would be Bleach.
3rd: Naruto shippuden the current episodes, feels more mature and well pretty cool watching them at 720P.

Also, someone earlier said that Berserk was cancelled. The anime only covered the first arc (left some things out like Skull Knight, which really pissed me off). However, the manga writer and illustrater Kentaro Miura is alive and well, and its up to the 5th Arc at Volume 35, chapter 315. You can find manga fansites that have translated it through to the latest volume or read it through the official publisher in the west: Dark Horse Comics. You can get it from them in Trade Paper Back up through volume 34. You might be interested to know that a new BERSERK anime is coming out. It is slated to cover the entire series, but will do it in movies instead of seasonal episodes.
