Okay..show me some with depth like Ultima Online, Everquest I & II, Vanguard etc... and we can talk.
Most of the UI features are re-sizeable through the HUD configuration screen. Unfortunately, this doesn't include the character window or crafting window. (The later, especially, is huge.) Windows like that can at least be moved aside a bit by putting your controller in mouse-mode to drag the window.
I was really annoyed at first by the size of the UI, but like it a lot more now that I've made most of the HUD items smaller, made the action buttons appear only when L2 or R2 is pressed, and moved the dialog window down to the very bottom edge of the screen. The only part whose size still bugs me is the crafting window.
So you are saying only MMOs have depth?
Xenogears, Shadow Hearts Series, Thousand Arms, Xenosaga, Xenoblade, FFT, FFIV, FFV, FFVI, FFVIII, FFIX, Lost Odyssey, Suikoden I-V, Legend of Legaia, Legend of Dragoon, Star Ocean I-III, Breath of Fire I-V, Chrono Trigger, Chrono Cross, Dark Souls, Demon's Souls, Skies of Arcadia Legends, Tales Series, Ni No Kuni, Ogre Battle, Disgaea Series, Alan Wake, Deadly Premonition, Condemned: Criminal Origins, Max Payne, L.A.
