The last desynthable drops from fish (that are not materia, sand, or gil sacks) were added in Stormblood.
Shrieker (common fish) - Waterproof Cotton Cloth
Archbishop (Big fish) - Cane of the Round (crafted version)
Glarramundi (Big fish) - Onishi Dogi
Also the last fishable minions were in Stormblood!
Tiny Tatsunoko is spearfished in the Ruby Sea
Castaway Chocobo Chick was added to the Isle of Endless Summer Fishing spot in Costa Del Sol, E. La Noscea, with patch 4.0 (when swimming was added).
Also ignores some fish which drop pigments!

Finally someone addressed this complaint I had for years. Its had to hear people agrue that 10/1000+ items is relevant. I want more for FSH. But after hearing other FSHs voice their opinions, I have to respect there is a community that enjoys the vibe. It would be nice to get the better pool of useful items as well as a vibe. Maybe one day
i wish bait was more useful to the fisher. Certain bait should exclude certain fish in each fishing hole. right now all the bait seems to be the same
Years ago I suggested adding some craftable items as desynth for each level range that would be used by CUL/ALC (mainly) like fish meat (filet/steak/paste/etc) byproducts (bones/scales/liver/etc). that way, no need for thousands use, just a few recipes every 10 levels
