That would be pretty exciting, not gonna lie.

A caster that use magically summoned weapons and has two freely switchable gameplay either melee or distance and focused on dealing damage because f... support.
... and yeah as mention above spear and shield tank would be neat too :3
Part of me wants them to tap the breaks on new Jobs and fix existing issues. I'm not in the camp of "no new Jobs until...!", but I do think a balance needs to be struck. And we already know DRG and AST are goign to be getting some kind of major reworks.
That said:
Green Mage - DoT Mage to replace the old SMN for the people who liked it. (I'm not one of them, mind you, but I want other people to be happy, so I'm more than fine asking for things for other people who aren't me)
Chemist - Would be neat to see a non-"Caster" Healer. Make it similar to MCH in terms of rotation (1-2-3 and some GCD CD abilities), give it a couple basic heals and a "Mix" command to combine a set of reagents like Mudras to get a given result. Give it a Caster/Canister gun/rifle to deliver the meds and to shoot its attacks (FFTactics Chemist equipment included the game's Elemental Guns/Rifles). Mix wouldn't be hard to implement, and the results would be a free cast of your basic spells (if you Mixed Potion or Hi-Potion or the like), or some of the more powerful stuff (like Elixir)
Geomancer - Can either be a "nature themed" (Earth, Air, Water) Caster for the people who really want that and are upset WHM doesn't do it, or can be a reverse RDM that engages in melee to build resources to spend on spells, sorta like PLD, just with nature elements instead of Holy.
Those are probably the top of my list.
In the "harder to implement" (the above three would be easy) category:
Time Mage - possible DoT Mage with party buffs/enemy debuffs.
Puppetmaster/Beastmaster - Either one as Limited Jobs could work; would finally be able to tell what are "Limited Job restrictions" and what are "Blue Mage restrictions", and it would be neat to have content actually made for Limited Jobs, plural, since BLU is the only one right now. They could also work as full Jobs but...SE doesn't seem to like pet classes and their minions would have to be a single skillset like normal Jobs where the customization is just unlocking, effectively, pet glamours by building/taming the various animal skins. Which would probably be fine, but a lot of people would find that far more boring than what they have in their minds.
.
Necromancer is probably never happening - both taboo and "evil" - and Hunter/Sniper/Ranger is pretty unlikely - due to too much overlap with either MCH or BRD in weapon type. It might be possible to have something like a Corsair (though not like FF11, since FF14 doesn't allow for that much randomization anymore) that does something like dual wield a saber and a pistol like some kind of pirate swashbuckler Jack Sparrow sort of thing.
Likewise, Ruinic Knight/Spellblade are both fairly unlikely since they overlap a lot with PLD (which effectively is one) and RDM.
Yoshi P mentioned something like you say with about not using old Jobs...but then they reached back to FF3 and pulled out SGE. Granted, it was a different take on the Job (and possibly just a general use term like "Master" or "Wise Man"), but still relevant to point out, and RPR is FF14's take on Type-0's Sice.
Though I know you want Melee, keep in mind RDM uses a rapier, which is a type of sword, as well. And SAM is very much a sword wielder. Of the 4 (5 if you count GNB as a sword instead of a gun) sword wielding Jobs in the game, 2(3) are tanks, 1 melee, 1 caster.
Haven't played it but vaguely aware of it: Didn't Lord of the Rings Online (the old one that's still running) have one of those?
And yeah, always liked polearms. DRG aside, it might not overlap too much due to the mix with shield, sorta like how PLD and SAM and RDM are distinct, despite each wielding a (in theory, SAM cheats) one handed sword.
I would say they should focus more on making the current jobs more entertaining to play, because as it is now... each new class/job... they are all being in one way or another alligned to be kind of the same, and the odd traits is going away from jobs.
In fact I would bold to say they should remove or make a few of the current jobs like blumage instead or something as in taking them away from the big game in a figure of speech,
Yeah, new jobs lose a lot of their excitement for me when I know they'll be shoehorned into the current job design mold, new animations and fancy particle effects can not carry a job for me.
But if we assume that problem didn't exist I could see a new tank originate from Ishgard now that they made peace with the dragons, Dragon Knight (which is technically just another name for Dragoon) or Dragon Rider.
You get your spear and shield (or maybe a lance to make it feel more like armored cavalry), taking influence from Dragoon techniques and combined attacks with your mount (which will technically just be a VFX effect like most of Summoner's current attacks).

I'd personally like to see either Geomancer as a caster and Mystic Knight as a melee or tank (preferably melee).
Geomancer would play around more with placed bubbles and elemental manipulation, rupturing the ground and spewing magma, poisoning the air around them, floods, etc. It could possibly fill in the niche that SMN left by having a couple of DoTs and abilities to modify said DoTs. The weapon would be a bell.
Mystic Knight would be either melee RDM where it eventually builds up to a big cast phase, or melee BLM where it spends time in different phases to either regen MP quickly or spend it on big elemental sword attacks. It might even fill in that slight niche that old MNK had with the elemental fists. My choice of weapon would be dual-wielding scimitars.
Other possibilities I wouldn't mind would be Judge, with a double-ended blade similar to Gabranth. Or a caster job that specializes entirely in Umbral/Astral, Light/Dark magic instead of elemental magic. Beastmaster with a Whip and a handful of pets (I know Square hates pet jobs, but one can dream).
Also Onion Knight/Freelancer as a limited job. Unlike BLU, no one expects this job to be a serious contender for an actual job and is one that really fits the bill as a limited job.
Blitzballer: Tidus, Wakka, Jecht
or
Gambler: Setzer & Ace
Beastmaster, Gambler or Chemist.
I really want a pet job like the hunter in WoW. The game has so many amazing looking monsters one could tame. Would be also a good opportunity to give us a different kind of ranger job. Could even share the gear with ninja maybe so we get ninja finally out of that niche gear system.
