I'd think probably a tank, because their rotations are generally easier. You'll have to rely on <macros> to perform some of the fight mechanics, but generally you don't have to move too much or perform ridiculous combos while moving.

The easiest DPS to run so far for me has been Bard, because it's like an Affliction Warlock with some direct burst damage. The number of buttons you have to press to make it work is relatively easy, and one can macro the song rotation. At least, my friend macroed the song rotation and doesn't seem to lose any DPS from it. So he has basically one button he pressed that rotates through the three songs somehow, and then has the majority of his other stuff on the 12 buttons easily accessible via MMO mouse.
Black Mage is tricky because you have to know the fight well to minimize your movement. I tried it and as much as I love the damage output, it's really hard to run it in fights that involve running around like a crazy person. If it is standing in one place, it does more damage than any other class in the game, though.
RDM would be a good balanced choice imo. It's not entirely a need-for-speed job and it gives you some cure/raise spells which would come in handy.
For any non-casual content, a BLM's performance is based on how well they manage their uptime, and its APM means very little... it's also not particularly forgiving of mistakes in that respect.
Granted, the OP just wants something for leveling, where it'd be okay, but a tank or healer would be even better picks. You could get away with most DDs if you're just questing, anyway.
Thank you guys very much for the information. I forgot to specify which role. In my case I don't care since I've played them all so it worked out wonderfully that everyone was giving info about all of them. This helped me narrow it down greatly and you all provided lots of good advice. Thank you. :)

Looks like I should definitely try out the Warrior & White Mage & Red Mage to see how well I can do with those.
An MMO mouse might be a decent investment if you play on a PC. I use one and they're much less strenuous on the hands.
Any class is going to use a lot of button pressing once you really dig into it.
It'd recommend staying away from anything with a lot of complex attack chains like ninja. It'd say white mage or even a ranged/magical dps would be best. Some classes also work well with controller if thats more comfy on your hands, i see a lot of dragoon controller players so that might be your style (im not a controller player tho so take that with a grain of salt)
Most would agree healers are the easiest and most laid back, except for ast; if this is your first time playing i really think whm would be a great start for you, assuming you like healing (if not blm is good too). I cant give perfect advice since i dont have wrist problems but i hope this helps even a little bit! People tend to be pretty chill in game so if you have to go slower im sure no one would mind.

It may be counter-intuitive since you're a seasoned keyboard player, but do have a look into the controller options. I find it much more gentle and less crampy on joints.
RDM is really easy on my hands aside from the melee combo as is WHM given it's lack of button bloat. You might also want to give SCH a try. We have a lot of bloat but most of it is pretty situational so the amount of mouse/cursor moving you need to do is pretty lax unless you're in high end content.
