Most recently: Finishing two of the bosses from the first 70 dungeon from about 40% with just me(on DRG) and the tank(PLD) after our NIN and AST died.
Overall: Finally getting the most aptly named pony, Nightmare. Had all the other ponies LONG before HW came out, and didn't get Nightmare until about 2 months ago(if that far back). Got my PLD mount, and 50 towards DRK mount, before finally getting that annoyance.

Tanking Coincounter as Dragoon, in v1.2x (dodge with Jump, stun with Leg Sweep and Vorpal Thrust, and absorb one attack with Dread Spikes)
Dodging attacks with Jump is the best feeling. It's a shame we can't have it.

Clearing Garuda EX for the first time.
I used to play on a Japanese server (and didn't really have any knowledge of the language) and I didn't really understand it when people tried explaining the fight to me in DF, plus I was still new to the game so I often had no idea what people in video guides were talking about and often what they said just went in one ear and out the other, so I actually had to figure out how Provoke and enmity in general worked, plus it helped me with targeting different enemies which was pretty hard to get used to on PS3.
Not only that but the fight also taught me that OT's aren't as useless as I originally thought from doing the HM Primals (I just thought I was a "back-up tank" in case the MT died) plus it also encouraged me to get more into raiding and I'm really excited to finally experience my first raid tier from the beginning with Omega.

Not sure if my proudest but certainly my most recent one.
A regular doma castle run with 23 minutes left before reset. Everyone somewhat undergeard and it was the Tanks last chance to max out on tomes.
Should have been easy but our tank got a 40k and we lost a couple of minutes getting him back.
We reached the final boss with around 3 minutes left.
I was playing samurai and the other dps was a machinist.
So I told the healer, I will take all the AOEs to the face, if you can keep me alive, we can do this.
Everyone pushed that uptime as much we could and we did it, mad props to that healer, killed the final boss with around 30 seconds to spare.
Dat gamer adrenaline though.

The most recent *huzzah!* memory was in POTD, and we were in the 41-50 range for the first time and near the end my party got overwhelmed and I, a Monk, was the last one standing, and somehow BARELY survived the onslaught. My Second Wind and Health Pot were both on cooldown. My party was cheering me on in the chat. Right as relief hit me the grim-reaper-looking enemy in the room respawned and I had to fight it again solo. I hit it with everything I had and when I was about to die my Second Wind and Health Pot cooldowns popped and I hit both, and killed the enemy within seconds of dying. My party cheered me on again. I had previously already used my Phoenix Down so I was sprinting to the Cairn of Return and the enemies respawned around me in each room as I did so, including right in front of it after I hit it, saving/rezzing my party. The party cheered again and I felt like a hero for a moment.

Grinding for the Luminary Pick, the mine so much in each zone at each lv nodes 1, back in 2.0 in 3 days (8hrs a day)... got nothing other than that, which seams like crap as its was/is probably easy to do, lest it makes grinding any less then that as Miner relaxing lol

Usually, it was from obtaining a full set of gear/glamour that is incredibly hard to get the mats for or is really expensive. They don't have this is in the game anymore, everything is just handed to you now and is in such massive quantities on the MB from a lack of rarity that it costs more to buy a nights worth of raid food.
