I'm past halfway there myself. It's just something to do to break up the bigger grind for your level 60 main. There's still PvP mounts/ranks to earn, torturous minion farming, glamor stuff & housing, MGP grind for Fenrir/Cloud, TT card collecting, etc. LOTS to do, just most of the extra stuff only appeals to a fraction of the audience as much as minmaxing your main job does.
I just want the crown.
I will say that leveling all the jobs does give you insight into ways to improve your main role.
I'm almost done leveling all the battle classes I wanted to fully level... of course then I'll probably go back and level the rest. Who knows?
Even after that I'll just do whatever I was doing when I wasn't leveling- I tend to take long breaks between leveling jobs.
I had all 50's in ARR, and will have all 60's in Heavensward before the next expansion.
When I'm done leveling I focus on two things; achievement hunting and helping others. I don't really bother gearing all DoW/M, as I generally only play two jobs in endgame content.
Maybe make all job has Zeta and Lucis (Or all HQ AF2 Crafting and Gatherer Gear)?
Then I start lamenting (even more) that there's an Esoterics cap and inevitably accept that there will be certain jobs I won't be taking into endgame activities.
For DoL/DoH: I become 90% self-sufficient and I start lamenting that there's a red script cap; until I realize I can craft most glamour and furniture anyway.
If I get all my jobs to 60 this early, I'd probably end up unsubbing within the next month or two. Leveling jobs that I don't play is typically the last thing I focus on (esp for dps due to the queue times). I've only decided to bring all my jobs to 50 near the end of 2.5. Here...I'm in process of doing that since a week before 3.1 actually came out.
There's different things that appeal to different people in the game, which I think is the concept of a theme park mmo or something. But imo, there's really not much else in this game that interests me that wasn't done in 2.0, and the content ever since 3.0 has been bleh in keeping my attention once you get beyond the novelty of it being "new".
I only have MNK, NIN, BRD, and MCH left to go for disciples of war...when I'm done with that I'll get all DoL/Doh jobs to 60 and work on gearing them, getting all the glam I want, and maybe actually working on my long neglected Bravura Atma. I'd also do PVP to get the warhorse.
Also, I have alts. I'm playing the game through again as a warrior main with no other jobs to experience the story with the Japanese dialogue, as well as the fact I love tanking and it's always in need.
8/11 fight classes 3/3 gathering classes 0 craft classes on 60 atm...
Once I have all 60 I'll gear up gatherers/crafters; get into star recipies and gathering; gear up all fight classes randomly; complete raids on classes I haven't used yet for those and definitely have some fun in DFing old coils... so not much would change just that once I feel like leveling I will use my lazy alts ;)

I would work on gearing the classes. That's almost as hard as leveling them. Especially since gearing the melee classes takes almost as much work as gearing all the rest of the classes combined.
