How hard is it to see he is gripping the club two handed and has a long cast timer called 1000lb swing, Earth shatter-er, GTFO Mega Death Swing!, or what ever its called? Also, when we did it the group makeup was Me as War, SCH, SMN and BRD. It was not easy, but it was FUN and DOABLE.
So, there are casuals and elitists in any MMO. I am glad there is currently content for both in ARR. If the content is too challenging... stay out of it. If its too easy and boring, don't do it. If you want to see or get the full game benefits, you have to do both.
What is jacked up in my opinion is the reward system for content. Spam WP 10x a week and get most of the BiS slots filled up.... rly?

The dungeon is not that bad. I beat it like 10 times while leveling from 47 to 50. I can beat it 90% time with DF. Only problem is people that don't know proper rotations or how to play their class optimally.
I've had good scholars heal me better than bad white mages there. Scholar makes things more difficult but shouldn't be a hindrance.
You said the 5 mob pull needs CC. It doesn't. Tank just needs to save CDs. CDs will mitigate damage, you can keep enmity from healer, and DPS shouldn't be a problem.
Were you labeling targets as tank? If you weren't, the lack of focus was your fault. If you were, that's just bad DPS.
I've finished the dungeon with 45 minutes left before. If the group can't finish in time, it's because there are problems with the group. I will admit I almost didn't finish it once because I had 2 second lag and ate several bad breaths with a new group. Again, that was a problem with me (I couldn't always dodge because of lag) as part of the group.
People can learn the mechanics and win. Coincounter doesn't even need a full party to beat him. I've had groups finish him off with just a bard, just a healer, just a tank, and only a tank and a healer. He might be difficult but if you have a good healer, this boss shouldn't be a problem.
I've had every class in my AV groups except warrior, a certain group setup is not required. AV is required for advancement but so are many dungeons from Satasha all the way up to AV. AV takes an average group about an hour to complete so it is on the long side but is very doable in 90 minutes allowed.
TLDR; AV is not hard with good players. If you are having problems, it's because of problems in your group such as someone not playing optimally or someone being under geared.

I have to say I only ever cleared it in 2.0 with people from 1.0. However that being said we did wipe a few times getting use to the new mistress mechanics but once we knew what was what it was pretty simple.
Also Aoe is key on mistress but tbh.
I had 2 drgs with me the first time they just saved there buffs for aoe and then doomspiked the little buggers to death very quickly when the tank pulled them all
I honestly don't have any real issues with AV. From my experience, its not the dungeon, but the players. People standing in AoEs, people eating ALL the fruit on the last boss instead of waiting for 3 or 4 stacks (no matter how many times they're told to stop and wait), people being impatient and pulling every mob in the dungeon...
As for cross-class skills shouldn't be required...unless a person just doesn't know any better (on their first character and have no one to help them), you really should get your skills. I mean, yeah, you don't need the ones not from your lv15 secondary requirement, but you'll be so much better with them than without. There's a reason a BLM with Quelling Strikes is better than one without it, or a any caster with Swiftcast. Yes, a good player can run dungeons without these...but you won't notice them missing on a good player. You will on a bad one...which brings us back to the point on player skill.
Player skill is the big thing...at the very least, as long as someone is trying, I'm happy. If they're being pig-headed and just won't play as a team...they're not worth it.
The only "bad" class options in AV is SCH just because of how difficult it is to keep the pet alive but it is do-able.
For Miser's Mistress, WHM has Holy, BRD has a lot of AOE, DRG has Doomspike and Ring of Thorns, BLM has Fire II, MNK has Rockbreaker and Howling fist and you can easily kill off straggling pods one by one with how fast Greased Lightning makes you.
WHM can Repose on that last big pull and those giant scorpions don't sleep anyway. SCH doesn't have that luxury.
The only party makeup I've ever had to give up in AV on has been a party with a tank that dc'd every 20 seconds and couldn't get past coincounter because of it.
I think everyone is over reacting quite a bit. I've done this multiple times to help friends, and having any number of combinations work okay for the final boss:
-WHM period can cleric stance and one shot holy the eggs/fruit (if for some reason it doesn't kill them, dps can easily kill them before they hatch)
If no white mage:
-Bard AOE dps + DRG not-so-great aoe dps
-DRG not so great aoe + monk not so great aoe
-BLM by himself doing AOE bliz spam easily killing all the eggs
The only job I feel that suffers here is summoner. To me, they're the only ones that have a legit beef with the final boss.
First boss: Eat fruit at two stacks. No idea how people can die at this boss unless the healer is bad, or the PLD constantly doesn't avoid attacks.
Second boss: Range DPS stays at max range and strafes when faced (when boss turns around), and melee/tank run through the boss to avoid early aoe, stunning the instant kill swing.
Third boss: Eat fruit at three stacks. If you have blm or whm this is just as easy as the first boss. When the boss runs, just have the whm/blm go to the center of the boss and either cleric stance holy or blz aoe spam. 0 chance seeds spawn. Other combinations are above.
In my opinion it's people who don't know the mechanics of the instance well or who don't know their jobs well who struggle with this dungeon.
Otherwise, I see this as just not having derpy party members.
I have issues with AV too, tried like 10 groups through DF and never been able to finish it in time or other pt issues. This dng need to be changed or at least not required to do to get ones relic weapon, I am really trying a whole week and nothing.....
Some of these issues with AV are a little extreme when you have this much trouble look at the group, it may not be you directly, but if you aren't telling people what to do to survive that's your fault.
Scholar has no problem just resummon, it's called timing its a key part of your job make sure your new one comes out as the old one dies.
You know who many people enter av in lvl 20 accessories and even gear bc they don't repeat dungeons. By just upgrading to company accessories you can gain over 20 of your jobs main stats + all the useful sub stats. That's not even going to actual armor Their is no excuse for being poorly geared. Several of y'all are in some serious denial about your play abilities or you just don't communicate with your groups and expect them to know something when its their first time, or they just haven't't picked up on that particular mechanic. If your not communicating why play an MMO?
First off the biggest thing I see in their is dps or healers eating bad breath and then eating a fruit right away, this is why you get free spinal drops and echo drops in the quest leading up to this dungeon ppl. As any job that cast if your not carrying echo drops your not doing your job. Spinal drops for any action based job as well.
Two: ranged dps standing way too far from the healer, dieing because they missed a fruit on time, or ran away from the healer, while still getting hit. I have only failed this dungeon once and have only done it in a PuG so if your FC is having troubles with, can't wait to you get to Titan.
Number and designate out the fruit before the battle if you need to I do with when I watch people die for this stuff and i'm a mage not a tank/healer. Typically we use the PS symbols(o,x, triangle, square). It sucks paying attention to casting bars esp if your on a job like brd, or blm and constantly looking at your hotbar but as far as dps goes boss number 2 only has 2 atks that a dps should have to dodge. A DPS should never stand in front of the mob, all of drgs abilities are from the side and back and monk is the same so far in my experience. leaving you out of the way of most of his atks.
It only takes 1 hit to kill a pod, drg can use its rang abilities to help it take out pods fast enough. Ranged on to your left atk the one in front of you sitch to the one on your right and 2 away from you and throw at it while you atk the one now right in front of you. Thats 4 pods downed in 3 seconds which just leaves the other pods for the other dps/tank. A tank that has shield lob should use it on pods if your having difficulty with them Like people said make her move to pop spawns, so you know when the pods are coming.
