FFXI had instanced boss fights (BC), no reason why they can't keep the dungeons open and the boss fights instanced.
As far as coffer key mobs, they just need to spread out the mobs that can drop the key. Think along the lines of Padfoot in Lufaise Meadows (FFXI-CoP).. but scaled back a bit. -
