It's a mistake to think that if you go all out in emnity gear you'll be a super hate tank. If you don't have the attack stats to do damage properly, that emnity gear will do nothing for you on War. Strenght, Attack, Vitality are all damage modifiers from War. Which you need to generate your emnity.
I know that more damage/healing generates more enmity, but what you get from enmity modifier is far greater.
Also STR increases WS damage more then ATK/VIT increases the AA damage, so it should generate more enmity.
I go enmity -> acc -> str for tank, trying to cap vit (softcapped around 330-350 depending on weapon dps, so not really hard)
Anyone notice he added all the combo stats to the body, but didn't for the pieces they'd be replacing...

no not really, attack effects all damage but doesn't have a high return. STR will have a higher return until you hit the soft cap (generally around 350) at that point +att yields a higher return then STR. Check out the DRG forums there is a nice thread that will give you a better idea of the effects of stats
I have crunched numbers and enmity boosting is always going to win out in a gear comparison to a DPS slotted piece, of course if your target is mistress and you can keep hate with more DPS then your goal is more DPS to the point where you can just barely keep hate. When I run with my #1 DPS who can do 170+ on mistress I have to run max enmity setup to hold hate. When I run in pugs or with the lower tier DPS members in the shell maxing at 150dps I use my DPS-DL set on WAR.
And no flanchard is better then sentinel legs/boots. sorry just plain wrong, see above for justification.

Yes i agree DL Bracer is junk , Felt Bracer with 2 or more meld materias is better
That's why we need a mix&match cloth for the stats
as the OP give example about MNK
IMO think it's good to use
Head : DL Eyepatch / Silver Tricorne with 2 or more meld with int IV materia
Body : DL Corselet / Rainmaker's Tunic with 2 or more meld with Savage Might IV
Hand : AF / Felt Bracer with 2 or more meld with Heaven fist IV or Str IV
Legs : AF / Felt Trouser with 2 or more meld with Ironman's will ( is it this one with Vit & Str stat) or Int set
Feet : DL Caligae / AF
Can't say that DL is best , it's upto the user choice of gear or set they prefer
I wasn't aware accuracy rings were "the standard". Capping stats first seems to be the standard, then accuracy and attack. If you want some accuracy eat some accuracy food. Why? Because you can eat food and get +34 accuracy (electrum rings +1 x2 = +36), but you cannot eat food and get STR+36 (ie. Rubellite Rings +1 x2). The accuracy rings with scream and choker are almost overkill on most encounters. Can't go in thinking the way you are geared is the best way all the time. Most mobs aren't as evasive as Garuda, and with ~420 accuracy, minuet, and food, I've no trouble hitting her. Don't need nearly that much for Princess or Miser's Mistress :p
I guess your standard is different, which doesn't make it "the standard" btw. This post of yours shows how much improvement you need to make:
I'll tell you right now that if you were capped on STR and VIT with your +40 str hands, and then decided to use darklight gauntlets instead (probably for "cool" factor) and did not adjust your other gear (ie. swapping a rubellite ring for an amber ring), then you will be way over vit cap, way under str cap, and gain a lot of attack that will not make up for the 31 str you just lost.
Now if you wear those and finagle your other gear to keep your stats capped and you gain just the attack +50, then you're good to go and actually pulling ahead of where you were. This is not a game where you can just do piece-for-piece swaps because one piece is better and then call it a day. Not even close and if you think that, you're doing it wrong.
i stopped reading when i realized you were comparing half a dozen items to one and calling the half dozen items combined better than the one.
