It's hard to say because this game has a lot of awesome music and I enjoy all of it... but if I had to pick one... Papaya :D

No idea what it's called, but I absolutely LOVE the boss music from Alexander. Before that, it was the Matoya's Cave theme and before that it was Hildibrands theme.
