This is probably the least likely thing to be implemented.

How about having a PVP league and people could bet gil on the outcome of matches?

I'd like FF8 or 9 card games. They were the most fun in my opinion. Battle arena from 7 sounds fun too.

Maybe not in gold saucer but I think blitzball would attract a lot of people

And its implementation would pretty much trump anything else posted in this topic thus far. Would get them a lot of subscribers.

I'd like to see some of the old games from FF 7-9 but I'd them to give us some new games too.

Chocobo Racing as a form of gambling would be nice.

Summon raising. You start with tiny egis, that grow to bigger avatars, until you got giant primes. And then you use them to battle in a giant arena.
